After the Super Bowl I was looking at some of the remaining pulled pork that I had lying around, and I thought of a new way to revamp it. And now I have a fun new horsd’oeuvre for Oscar Night, or more likely an afterschool snack. I love it when I find a new twist on dinner so that I can use up what’s left and it doesn’t go to waste.
3 6-inch corn tortillas cut into quarters
1 cup of prepared BBQ pulled pork
1/2 cup of mild green salsa
1/4 cup of shredded mexican mixed cheeses
1. Heat oven to 375 degrees.
2. Mist a 12-cup muffin tin and the softened corn tortillas with olive oil. Then place one-quarter of each tortilla in the muffin cup.
3. Spoon into the tortilla bowl 1 tablespoon of pork, then top with a teaspoon of salsa and a big pinch of cheese.
4. Bake for 10-12 minutes or until cheese is melted and tortilla is golden brown.
Makes 12 appetizers portions.
